Why This Formula Works

InstantChill Juice Sorbet Formula
Yield: About 1 quart sorbet.
This recipe is designed specifically for bottled fruit juices and requires no cooking or pre-freezing.
Ingredients
- 3 cups (24 ounces) fruit juice
- 1/2 cup granulated sugar
- 1/4 cup hot water
- 1 tablespoon lemon juice or lime juice
- Pinch sea salt
- 2 tablespoons corn syrup, agave syrup, or honey for an even smoother texture (optional)
Instructions
- Pour the juice into a large mixing bowl or pitcher.
- Combine the hot water and sugar and whisk until completely dissolved.
- Add the sugar mixture to the juice.
- Stir in the lemon or lime juice and pinch of salt.
- If using, add the corn syrup, agave, or honey and mix well.
- Pour the mixture directly into the Instant Pot InstantChill.
- Run the Sorbet or Ice Cream program according to the manufacturer’s instructions.
- Serve immediately for a soft, scoopable texture or transfer to a freezer-safe container and freeze for 1 to 2 hours for a firmer sorbet.
Recipe Notes
- Most fruit juices work well with this formula, including watermelon, mango, pineapple, orange, lemonade, berry blends, and tropical juice blends.
- If the juice is already very sweet, you can reduce the sugar to 1/3 cup.
- For tart juices such as lemonade or cranberry blends, the full 1/2 cup sugar usually produces the best texture.
- The optional corn syrup, agave, or honey helps reduce ice crystals and creates a smoother, more professional-quality sorbet.
Storage
Store leftover sorbet in an airtight container in the freezer for up to 2 weeks. Allow the sorbet to sit at room temperature for 5 to 10 minutes before scooping if it becomes too firm.
