Making homemade probiotic yogurt is a way to experiment with specific bacterial cultures at home. Ultimate’s L. reuteri and L. gasseri probiotic capsules are marketed for two uses: taking them as daily supplements or using them as starters for homemade yogurt.
In my videos, I explore these products, explain how they’re used, and demonstrate the equipment that can make the yogurt-making process easier.
Can You Use Probiotic Capsules to Make Yogurt?
Ultimate offers probiotic capsules designed for both supplement use and yogurt-making. This gives you the option of taking the capsules according to their label directions or using them to prepare a homemade yogurt batch according to the manufacturer’s instructions.

How to Make L. Reuteri and L. Gasseri Yogurt
If you’d rather make yogurt at home, the fermentation process requires attention to temperature, time, milk preparation, and sanitation.
L. reuteri and L. gasseri have different fermentation requirements, so don’t assume the same temperature will work for both. Follow the instructions provided for your specific starter. For the products discussed here, the guidance I’ve received is approximately 99°F for the single-strain L. reuteri starter and 109°F for the L. gasseri starter.
Plant-based yogurt can require additional preparation to achieve a thicker consistency. For soy milk, for example, the recipe may call for heating the milk and using a thickener such as agar agar.
A yogurt maker with adjustable temperature and time controls can make it easier to maintain the required conditions throughout fermentation.

Which Products Do You Need?
Your setup depends on whether you want to take a probiotic capsule or make yogurt at home. For yogurt-making, you’ll need the appropriate starter, the milk and other ingredients specified in the recipe, and equipment capable of maintaining the required fermentation temperature.
If you want to make plant-based yogurt, start with a recipe designed for your chosen milk. Proper preparation and fermentation are important for both texture and food safety.
