
Wondering how to substitute eggs in a cookie mix? In this post I share a video tutorial of how to swap eggs and dairy with a boxed chocolate chip cookie mix to make perfect chewy eggless chocolate chip cookies every time.

How to Make Eggless Chocolate Chip Cookies with Boxed Mix
Makes about 20 eggless vegan chocolate chip cookies
Ingredients
- 1 packaged boxed chocolate chip cookie mix, I used 365 Whole Foods Market Chocolate Chip Cookie Mix from Amazon
- 5 tablespoons vegan butter
- 1 tablespoon ground flax meal, I used Anthony’s Organic Ground Flaxseed
- 1/4 cup water + 1 tablespoon water
Directions
- Preheat oven to 350F and line two baking sheets with parchment paper.
- Using an electric mixer, combine vegan butter, ground flaxmeal and water for about 1-2 minutes on high speed until creamy.
- Add cookie mix a little at a time. I added 1/3 of the mix at a time.
- Mix to incorporate on medium speed.
- Add any other addins like nuts, dried fruit and flavorings. Mix well to combine.
- Bake according to package directions.
Tips
- I used a parchment lined baking sheet for easy clean up. I use unbleached pre-cut parchment paper that fits the size of my baking sheets. Here’s my recommended parchment paper.
- Using a hand mixer is important to make this very easy. Otherwise you have to mix for a long time with a wooden spoon. I recommend the Kitchenaid 9-Speed Hand Mixer.
- I recommend mixing this dough in a mixing bowl with a handle. It makes it very easy to hold while mixing. Here’s the bowl I used.
