Have you ever made kale chips? These are a delicious way to enjoy kale and easy to make in the oven! Dr. Greger’s How Not to Die Cook Book shares a great recipe for Cheesy Kale Crisps. In this post I share a video where I make this vegan Dr. Greger recipe and taste test the results.

One of my favorite cookbooks is Dr. Greger’s How Not to Die Cook Book.

This cookbook is packed with Daily Dozen meal ideas and recipes, as well as photos and tips for following these dietary recommendations.

His followup cookbook, How Not to Diet, is also great! It’s similar to the first book, but focuses on weight loss tips and tricks following a whole food, plant based diet.

Dr Greger Vegan Cheesy Kale Crisps

This recipe for kale chips is easy and doesn’t require a dehydrator (but you can surely make these in one!).

All you have to do is blend some raw cashews, yellow miso paste, rice vinegar, nutritional yeast, bell pepper, turmeric, smoked paprika and water in a blender, then pour this sauce over washed and prepared kale.

Bake these vegan kale chips in the oven for 20-30 minutes and enjoy!
