Recently I’ve been creating a lot of vegan baking recipes using silken tofu. Silken tofu is a great egg replacer. So, I decided to try adding silken tofu to chocolate cake mix and chocolate frosting mix. Here’s a video of what happened!

I Put Silken Tofu into Chocolate Cake Mix – Here’s What Happened
The results were amazing!
I used my Panasonic bread machine to bake this cake.
I would recommend baking it in the oven next time in two 8″ cake pans.
I noticed after starting to bake the cake in my bread machine that the recipe on the 365 Whole Foods Market Chocolate Cake Mix was for 2 8″ cake layers so that was my mistake. The cake ended up being very fudgy, almost like chocolate brownies and it was still very delicious.
Silken tofu chocolate protein frosting
The chocolate protein frosting was the real winner! I simply mixed silken tofu with chocolate frosting mix from 365 Whole Foods Market. The results were AMAZING! The chocolate frosting tasted like chocolate frosting fudge. I smothered it all over the cake and it was delicious.
I had some of the silken tofu chocolate frosting leftover and enjoyed it with sliced bananas as another dessert the next day.
Why silken tofu with chocolate cake mix and frosting mix?
There are a few reasons why I chose to do this.
Silken tofu adds extra protein to vegan baked goods
I’m always looking for new ways to enjoy tofu, especially silken tofu. Trader Joe’s is now carrying organic silken tofu in their stores so I purchase it often. I love how versatile this tofu is! It adds protein to a variety of recipes, including my Silken Tofu Dough which I’ve been using to make vegan Cinnamon Rolls, Bagels, Garlic Bread Twists, Hamburger Buns and more. The tofu adds extra protein to these vegan baked goods.
Eggless baking recipes benefit from silken tofu
The silken tofu is a great egg replacer for baking. It adds structure to baked goods, protein, and creaminess that eggs usually will add. This is why it worked so well in the chocolate cake mix which usually requires eggs.
Silken Tofu Desserts eBook
I created an eBook with a lot more ways to use silken tofu with boxed mixes. You can use silken tofu in cookie mixes, brownie mixes, frosting mixes, and so much more.
