I love using my bread machine! Make this easy focaccia dough in your bread machine then bake it in the oven to make delicious bread, pizza dough or even breadsticks. I use a combination of whole wheat and all-purpose flour but you can use all one type if you prefer.
Best bread machine for beginners
I bought the Elite Gourmet Bread Machine with CERALAST (ceramic pan) earlier this year and it has quickly become my go-to bread machine. I also use the Panasonic Bread Machine, but the Elite Gourmet is just smaller and easier to move from my pantry.
I use it to make dough for a variety of bread machine recipes.

Here’s my recipe for bread machine focaccia dough:
Easy Bread Machine Focaccia Dough
Makes 1 9″x13″ loaf focaccia bread
Ingredients
- 1¼ cups (300 g) warm water
- 3 tablespoons (40 g) olive oil
- 3 cups (360 g) all-purpose flour, whole wheat flour, or combination of both (I use 100g whole wheat and 260 all-purpose)
- 1 teaspoon (6 g) salt
- 1 tablespoon (12 g) sugar
- 2 teaspoons (6 g) active dry yeast
Instructions
Bread Machine Method
- Add the warm water and olive oil to the bread machine pan.
- Add the flour, covering the liquid completely.
- Sprinkle the salt and sugar into separate corners of the pan.
- Make a small well in the center of the flour and add the yeast.
- Select the Dough cycle and start the machine.
- When the cycle is complete, transfer the dough to a well-oiled 9 x 13-inch baking pan.
- Gently stretch the dough to fit the pan. If it resists, let it rest for 10 minutes and continue stretching.
- Cover and let rise for 30 to 45 minutes until puffy.
To Bake as Focaccia
- Preheat oven to 425°F (220°C).
- Drizzle the dough with 1 to 2 tablespoons olive oil.
- Use your fingertips to press dimples all over the surface.
- Top as desired with rosemary, flaky salt, garlic, cherry tomatoes, caramelized onions, or other toppings.
- Bake for 20 to 25 minutes until golden brown.
- Cool slightly before slicing.
Storage
- Store covered at room temperature for up to 2 days.
- Refrigerate for up to 5 days.
- Freeze baked focaccia for up to 3 months.
Recipe Notes
- For extra flavor, refrigerate the dough overnight before shaping and baking.
- This dough also works well for sheet-pan pizza, breadsticks, sandwich rolls, and garlic bread.
- If your kitchen is cool, allow additional rising time before baking.
