What are veggie based breakfasts?
- Oftentimes we think of grains, eggs, or meat for breakfasts. But, you can enjoy veggies for breakfast too!
- Veggie based breakfasts are a great way to get your Daily Dozen servings of leafy greens, cruciferous and regular vegetables in each day. I like to make a big heaping dish packed with vegetables before I head out for the day.
Healthy quick vegetarian breakfast
This breakfast is quick to prepare. It takes just about 9 minutes from start to finish if you’ve done your 30-Minute Vegetable Meal Prep for the week. It’s packed with alkaline foods including:
- Yellow potatoes
- Zucchini
- Bell peppers
- Cilantro
- Onions
- Green onions
- Avocado
- Raw cabbage
- Alkaline seasonings
8 Vegetable Hashbrowns
- Makes 2 servings
- Cooking time: 9 minutes
Equipment
- Skillet
- Cooking spatula
- Vegetable grater
- Cutting board
- Potato Masher
Ingredients
- 2 boiled yellow potatoes, chilled, grated
- 1 zucchini, grated
- 1/2 bell pepper, sliced into strips
- 1/2 cup sliced onions
- 1/2 cup chopped green onions
- 1/2 cup cilantro or parsley
- 1 small avocado, sliced
- 1 cup cabbage, shredded
- 1 1/2 tablespoons Mexican Alkalizing Seasoning Blend
- 2 teaspoons avocado oil, optional
- 1 teaspoon Real Salt
Directions
- Heat skillet, add avocado along with onions, bell peppers, and green onions. Saute 2 minutes on medium high heat.
- Add shredded zucchini and potatoes. Cook for another 2 minutes.
- Add Mexican Alkalizing Seasoning Blend and salt. Toss to coat vegetables in the seasonings.
- Using a potato masher, press hashbrowns down in the pan so they can brown on the hot surface of the skillet.
- Top with fresh cilantro or parsley.
- Place shredded cabbage onto a plate
- Scoop heaping spoonfuls of cooked vegetable hashbrowns onto cabbage. Top with sliced avocado and any other sauces or seasonings you enjoy.
- Garnish with more cilantro and enjoy!
