What is 30-minute meal prep with lots of veggies?
- Meal prep is a term used to describe washing, chopping and storing foods for serving at a later date. This can be just ingredient meal prep or full meals prepared. In this tutorial I share how to meal prep ingredients for meals.
- 30-minute meal prep is a term used to describe meal prep which takes half an hour to do. This is great for people who don’t have a lot of time to spend meal prepping but want to get a lot of vegetables prepared for the week.
- Veggies meal prep is a term used to describe the preparation of vegetables for use in cooking at a later date.
Veggies
I like to use a variety of alkaline forming vegetables each week for meal prep, including:
- Cabbage
- Red cabbage
- Broccoli
- Onions
- Green onions
- Carrots
- Cilantro
- Parsley
- Arugula
What are alkaline forming foods?
- Alkaline forming foods, also referred to as “alkalizing“, are foods which have a low dietary acid load on the body after ingesting.
- To clarify, some foods which are acidic outside the body, like lemons, are actually alkaline forming inside the body after ingested.
Why eat alkaline meals?
Alkaline meals are ones which include mostly or all alkaline forming foods. Eating alkalizing meals helps our kidneys not have to work overtime to process these foods, and can help prevent acidosis.
Most vegetables are alkaline forming foods which is why it’s important to include a lot of veggies into the diet each week.
That’s why I like to do this 30-minute alkaline veggie meal prep!
When I have all my veggies meal prepped ahead of time, it incentivizes me to eat these alkaline forming foods.

30-minute meal prep with lots of veggies

Ingredients
I like to shop for vegetables at the farmer’s market as often as possible. Oftentimes produce purchased at farmer’s markets is cheaper than at the grocery store. It’s also often more fresh because farmers usually harvest just before the market begins.

Equipment
To make vegetable meal prep easy I like to use my food processor for slicing and shredding. This makes meal prep quick and easy! I also use a few other kitchen tools which I share affiliate links to purchase on Amazon below, including:
- Food processor
- 8″ Chef Knife
- Cutting board
- Food storage containers or bags
- Large bowl for washing produce
- Grapefruit seed extract for washing produce
Directions
Here’s a quick overview of how to meal prep lots of veggies in 30 minutes:
Wash and rinse produce with Grapefruit seed extract and water.
Use food processor with slicing blade to shred and slice:
- Green cabbage, chopped, core removed
- Red cabbage, chopped, core removed
- Onions, chopped
Use food processor to shred:
- Carrots, chopped
Use 8″ Chef Knife and cutting board to chop:
- Green cabbage, into larger pieces
- Broccoli
- Green onions
- Parsley
- Cilantro
- Arugula
Store all prepared vegetables in food storage containers or bags.
Make sure to thoroughly dry all produce and press all air out of food storage bags before storing in the refrigerator to prevent spoilage.
