What are yeastless bread recipes?
- Yeast is a common leavening agent used to make breads rise and fluffy in texture.
- Many people prefer not to eat yeasted bread for several reasons, including candida diet cleanse and Daniel Fasting.
- Yeastless bread recipes are recipes for baking homemade bread with no yeast.
Why make bread with no yeast?
- If you’re trying not to consume leavening (such as for the Daniel Fast), or are trying to remove candida from inside the body, avoiding yeast is important.
- People who are Daniel Fasting or celebrating Passover do not consume leavened bread for biblical reasons. People who are not eating yeast because of candida overgrowth do not consume yeast for health reasons.
- Other home bakers don’t want to use yeast because it’s a hassle and can be intimidating.

Daniel Fast bread recipes
Personally, I don’t like to bake with yeast because it takes a lot of extra time to bake bread and I don’t like the flavor. Also, when I’m Daniel Fasting I cannot consume yeast or any other leavening agents like baking soda or baking powder.
Unleavened bread without yeast
The following recipes are all unleavened bread recipes, meaning they do not contain the three most common leavening agents:

Yeast Free Whole Wheat Bread Mix
Makes 16 servings
This is my basic unleavened whole wheat bread mix recipe used to prepare all recipes below.
Equipment
- Digital Scale
- Food processor
- Freezer bags
- Measuring cup
- Permanent marker
Ingredients
- 608 grams Bob’s Red Mill Organic Whole Wheat Flour
- 6 grams Salt
- 65 grams Olive Oil
Directions
- In a food processor, combine all ingredients for 1 minute.
- Transfer to a freezer bag for storage. Press all air out of bag and seal well.
- Date and label bag with expiration date and contents.
Tips
- I recommend purchasing flour in bulk, specifically 5 lbs or 25 lbs.
- I prepare 18 mixes using one 25 lb bag of flour and several bottles of olive oil. Then, store the bread mixes in a food storage container with lid. This makes bread making super easy because you just empty a bag and bake your recipe.
- When you find a recipe you like, premix the other dry ingredients into the bread mix. This will make it even easier to prepare your breads!

20-minute Yeast Free Flatbreads
These yeastless flatbreads are great for everyday breads. Prep dough in less than 5 minutes and bake for 11 minutes to have fresh bread ready for lunch and dinner! Store baked breads in an airtight container in the refrigerator for up to one week. Freeze baked breads for up to 1 month.

Makes 12 servings
Equipment
- Food processor
- Cup measure
- Cutting board
- Knife
Ingredients
- 1 All-Purpose Yeast-Free Whole Wheat Bread Mix
- 1 3/4 cup Water
- Olive oil, for greasing baking sheets and hands
Directions
- Preheat oven to 450ºF. Grease 3 baking sheets with olive oil.
- In a food processor, combine bread mix with water.
- Knead dough int food processor for 1 minute.
- Transfer dough to cutting board with greased hands.
- Shape dough into a large log, then slice into 6-8 pieces.
- Using grease hands, transfer each piece to prepared baking sheets. Spread dough out into flatbreads about 1/8 inch thick, or desired thickness.
- Flip flatbreads so they are coated both sides in olive oil.
- Top with desired toppings.
- Transfer flatbreads on baking sheets to preheated oven.
- Set time and bake for 11 minutes.
- Remove from oven, let cool, transfer to cooling racks.
- Store in airtight container in the refrigerator for up to one week.

Onion Garlic Flatbreads
Add 1-3 cloves fresh garlic or 1-2 teaspoons garlic powder to dough before processing. Thinly slice fresh onions and place on top of flatbreads before baking. Sprinkle with garlic onion salt before baking, if desired.
Pesto Tomato Flatbreads
Spread 1-3 teaspoons pesto on top of flatbread dough with a spoon or pastry brush and top with thinly sliced tomatoes before baking.
Cinnamon Sugar Flatbreads
Sprinkle 1 teaspoon sugar and a dash of cinnamon evenly on each flatbread dough before baking.
Rosemary Olive Flatbreads
Before processing, add 1/2 cup pitted olives or olive tapenade. Before baking flatbreads, sprinkle with chopped rosemary and garlic salt.
