High Protein High Fiber Breakfast Tofu Scramble
This quick and easy Tofu Scramble recipe is packed 34g protein and 21g fiber! I make this for breakfast, lunch or dinner several times per week. Save time by cooking your potatoes in the beginning of the week and storing them in the fridge.
Below is a video tutorial giving step-by-steo directions for how to make this delicious and hearty breakfast dish. This recipe is vegan, plant-based, and can be made in about 10 minutes if you already have boiled potatoes in the fridge.
