This easy vegan kale salad recipe is super simple to prepare and includes just three basic ingredients: kale, sesame and chickpea salad. This can be part of your weekly meal prep. Kale is packed with antioxidants, chickpeas are filled with fiber, and sesame seeds are a great source of plant-based calcium.
To meal prep this easy vegan kale salad, you can place all of the ingredients into a large glass jar or container and store in the fridge for up to four days without dressing. When you’re ready to enjoy, add your favorite vinegar or oil-free salad dressing and enjoy. This salad can also be added into your burritos, tacos, and enchiladas.
Easy vegan kale salad recipe
Makes 6 vegan kale salads
Ingredients
- 1 bunch kale
- 2 cups cooked chickpeas
- 4 tbsp raw sesame seeds
- 1/2 avocado, sliced, peeled
- 1/2 cup cooked grain, such as wild rice or brown rice
- 1 tomato, sliced
- 2 tablespoons lemon juice or vinegar such as apple cider vinegar, rice vinegar or balsamic.
Directions
- Wash and remove stems from kale and chop into bite sized pieces.
- Toss with cooked chickpeas, sesame seeds, avocado, grain and tomato.
- Top with vinegar.
Tips
I like to prep my kale salads in a glass jar for the week with no dressing. When I’m ready to enjoy some kale, all I have to do is open my fridge and pull out this jar. I like to squeeze lemon juice on top and eat this salad as is, or add these greens to my soups, tacos, burritos, and eat with steamed rice.
