What is a meatless stew recipe?
- Traditional stews are made with beef, and oftentimes tomatoes, onions, herbs and seasonings.
- This meatless stew recipe is a vegan version of Beef Stew. It calls for lentils and mushrooms instead of beef.
What are no chop vegetable soups?
- Vegetables soups are usually made with a variety of vegetables which often require lots of washing and chopping.
- No chop vegan recipes are recipes which require no chopping or preparation.
- These are also referred to as “vegan dump meals” because you simply dump the ingredients into the cooking pot or slow cooker.
To make this meatless stew, simply pour the contents of containers of ingredients into a pot and simmer with water.
Can I make this stew in a slow cooker?
Yes, this meatless stew can be simmered on High heat for 3-4 hours in a slow cooker. Saute the onions and mushrooms on the stovetop first, if desired. Then transfer to the slow cooker for a dump and go meal prep.

I used my Lodge dutch oven to cook this soup and it turned out great! I like to make stew in cast iron, it gives me that nice hearty cottage cooking feel. You can purchase these on Amazon and they make great soup pots and are great for baking loaves of bread.

Ingredients
- 1 packaged diced onions
- 1 package sliced Crimini Mushrooms
- 1 cube frozen crushed garlic
- 3 teaspoons Trader Joe’s Aglio Olio Seasoning
- 3 teaspoons Trader Joe’s Mushroom Umami Seasoning
- 1 28 oz can San Marzano Whole Tomatoes with Basil
- 1 package Trader Joe’s Steamed Lentils
- 2 bay leaves
- 6 cups water
Directions
- Heat a stock pot or Lodge Cast Iron Dutch Oven on medium high heat. Add diced onions and sliced mushrooms. Saute for 3 minutes, stirring occasionally.
- Add garlic and seasonings and toss to coat onions and mushrooms.
- Add lentils, canned tomatoes, bay leaves and water.
- Simmer on medium high heat uncovered for 30 minutes.
- Remove bay leaves before serving.
