What is Daniel’s Fast?
The Daniel Fast is a term used to describe the diet Daniel, in the Old Testament, ate during his time in captivity from the Babylonian king. He chose to fast in order to not defile his body with the king’s delicacies. Instead he requested a diet of only vegetables and water.

Daniel Dast potato recipe
This vegan queso recipe is made with potatoes and carrots. It’s similar to a cheese-based queso recipe except it’s dairy free and plant based.
The mixture of boiled yellow potatoes and carrots, along with nutritional yeast, vegan butter, onion and garlic salt, lemon juice, chili powder and water makes a delicious queso sauce!
How to use this potato and carrot queso sauce
This sauce is part of the free 7 Day Daniel Fast Menu PDF and is enjoyed on days 1, 2, 3, and 4 for dinner. This recipe makes enough for seven days so you can also enjoy it everyday if you prefer.
Enjoy this queso with beans, cooked rice, shredded cabbage, guacamole, salsa and your favorite hot sauce in a bowl, tostada or burrito.
This recipe is great because it’s made with basically just vegetables: potatoes and carrots. When you are enjoying it you can also count these vegetables as part of your Daily Dozen.
Nutrition in potatoes
Potatoes with the skin on are a great addition to the Daniel Fast because they are packed with vitamins B6 and C.
A medium sized potato with the skin gives you about 10% of the daily recommendation for B6, and about 30% of Vitamin C.

Daniel Fast queso sauce recipe
Makes about 6 cups sauce
Recommended Equipment:
- Vitamix Blender
- Pot for boiling potatoes and carrots
Ingredients
- 3 cups yellow potatoes, with skins on, boiled until tender (about 30 minutes)
- 1 1/2 cups carrots, unpeeled, boiled until tender (about 10 minutes)
- 3 teaspoons garlic onion salt
- 1 teaspoon chili powder
- 1/2 cup non-fortified nutritional yeast
- 1/4 cup vegan butter or olive oil
- 1 1/2 teaspoons salt
- 1/4 cup lemon juice
- 2-3 cups water (less water for thicker sauce, more water for drizzling sauce)
Directions:
Boil potatoes and carrots
- Place yellow potatoes into a pot of cold water. Bring to a boil and reduce heat to medium and simmer for 30 minutes. After 20 minutes of boiling the potatoes, add the carrots into the pot and boil for 10 more minutes. Check for doneness by piercing potatoes and carrots with a fork. It should be able to go through the potatoes and carrots easily. It is important the potatoes and carrots are cooked fully (it’s ok if they overcook a little).
Blend sauce
- Drain water and place cooled boiled potatoes and carrots into blender.
- Add all remaining ingredients into blender. Cover with lid and puree on high speed until creamy, about 1 minute.
- Transfer queso sauce to storage containers. Let cool to room temperature, then cover with a lid and store in the refrigerator for up to 1 week.
Tips for preparing
- This recipe calls specifically for yellow potatoes. It is not recommended to use russet (or white) potatoes. White potatoes are used to make mashed potatoes. This sauce is not supposed to taste like mashed potatoes.
- The yellow potatoes are waxy and make a smooth, creamy texture when blended.
- A Vitamix Blender is recommended, but not required. However, a Vitamix will make a very creamy sauce because the high powered blender will fully puree the potatoes and carrots. See photo in this post for what the sauce looks like after about 1 minute in the Vitamix blender.
