In this post I share a video tutorial for how to make a quick and easy Indian Potatoes and Peas recipe using vegetables from my weekly meal prep.
This is a great one pot meal for breakfast, lunch or dinner. It’s a great way to get a big variety of leafy green vegetables into one dish. Serve this over cooked brown rice if you want an even heartier meal!

Indian Potatoes & Peas with 6 green veggies

Equipment
I used a Cast iron 12″ wok: to saute this recipe in one dish. A regular skillet can also be used..
Ingredients
This alkaline recipe is packed with 6 green vegetables including:
- Green onions
- Broccoli
- Cabbage
- Green Peas
- Cilantro
- Spinach
Other ingredients include:
- Boiled yellow potatoes
- Onions
- Alkaline Indian Seasoning Recipe including Turmeric, Ginger, and Cumin powder
- Reduced Fat Coconut Milk, optional
- Tamarind Paste
- Asafetida
- Avocado oil, optional
Directions
I made this dish in less than 10 minutes! Simply combine all ingredients into a skillet or wok and saute for 8 minutes. Add seasonings and toss together before serving.
