What are meatless chili freezer packets?
- Freezer meal prep is a term used to describe cooking meals ahead of time to store in the freezer for reheating at mealtimes.
- Meatless chili is a term used to describe a hearty soup made with beans and lentils, spicy seasonings and tomato sauce. Chili is a popular American recipe often made with ground meat. This recipe calls for lentils and beans instead of meat.
- Freezer chili packets is a term used to describe cooked chili portioned into freezer bags for individual or several servings. Instead of freezing a big pot of chili, divide the chili into packets so you don’t have to reheat a whole pot of chili at one time.
This is a great idea for vegan protein meal prep because you can cook a big batch of meatless chili and serve small amounts over time.

I used my Lodge Cast Iron Dutch Oven to cook this soup and it turned out great! I like to make stew in cast iron, it gives me that nice hearty cottage cooking feel. You can purchase these on Amazon and they make great soup pots and are great for baking loaves of bread.

I used Trader Joe’s vegan ingredients to prepare this meatless chili.
Cheap easy plant based meal
This plant based recipe is great because it’s super easy to prepare! Simply open packages of ingredients and dump into a pot. This type of recipe is called a “vegan dump recipe“.
It’s also super cheap, just $.65 per serving!
This recipe makes 24 servings which makes it great for meal prep. In just under an hour you can have 24 high protein vegan meals ready to store in the freezer.
Daily Dozen
Meatless chili is a great meal for counting your Daily Dozen. This recipe includes one portion of legumes per serving. If you consume 3 servings of this chili you’ll get an entire day of legumes in one dish! It is also oil-free and gluten-free.
Serve this recipe with shredded cabbage to add a cruciferous vegetable and serve with a piece of whole grain bread to check off even more boxes.

- Large stock pot or Lodge Cast Iron Dutch Oven
- Can opener

- Freezer bags (gallon or quart)
Ingredients
- 2 packages Trader Joe’s Steamed Lentils
- 2 15 oz cans Pinto Beans, drained
- 2 15 oz cans Kidney Beans, drained
- 1 9 oz can Corn, drained
- 1/4 cup Chili Powder
- 2 teaspoon Dried Oregano
- 2 teaspoons Cumin Powder
- 2 teaspoons Salt
- 1 tablespoon Trader Joe’s Onion Salt
- 2 15 oz cans Trader Joe’s Organic Tomato Sauce
- 4-6 cups Water, to cover
Directions:
- Pour all ingredients into a large stock pot. Pour enough water to cover ingredients.
- Simmer uncovered on medium high heat for 40 minutes, stirring occasionally.
- Turn off heat and let cool to room temperature.
- Portion into freezer bags and store for about 3 months in freezer.
Reheating and Serving Suggestions
- Dump contents of freezer bag into a pot and reheat on the stove with about 1/2 cup water on medium heat for 5-10 minutes, or until hot.
- Let freezer bag that overnight in the refrigerator. Or, thaw in the microwave in bag or dumped into a bowl according to microwave directions.
- Serve with toasted bread, cooked rice, tortilla chips, in tacos, over or baked potatoes.
